Our pork is from Sussex. It is free range, outdoor reared and fed on a natural cereal based diet which ensures it has a superior flavour, both succulent and tasty. We source traditional breeds, usually ginger and black haired as well as various crosses.
We buy the pork whole and cut it skilfully by hand, also using the meat in our sausages. Our cured bacon is made from larger pigs, outdoor reared and normally procured from Essex.
Our delicious bacon is oak smoked, dry cured and sliced by us. Bacon is made from fresh pork which has been cured (preserved with curing salts and muscovado sugar). It was originally preserved in this way so that it would keep for longer. Bacon is either unsmoked (also called green), or smoked. It’s smoked by being hung on a rack in a smoking chamber.
