Lamb cuts

Our lamb is naturally reared and usually sourced from various farms in Sussex. All breeds are born between January to May, with the exception of Poll Dorset which can lamb all year round, but they are a bit of a rare breed.

We buy whole lambs and age them for 7-14 days to mature the meat resulting in a wonderful texture and sweet flavour. The meat is then skilfully cut by us using traditional butchery methods.
