All our beef comes from prime British cattle and includes Sussex (when available), Aberdeen Angus, Hereford and various cross-breeds. We buy beef with good definition of fat to ensure excellent natural marbling, essential for succulent and tasty meat.
We 'dry-age' the beef for around 21 days. This is an age-old process for naturally tenderising the meat that also gives it a richer flavour. Then it is expertly butchered by us to give you the best cuts.
